A surprising cocktail. In the pursuit of ever shorter supply chains, sharing and exchange, local producers and their specialities take pride of place. You'll be offered the precious catch of the boat that lands on the beach of the estate, the best local meats, alongside those from further afield, and exceptional dishes decorated with floral and vegetable garnishes, as well as citrus fruits grown on site. All paired with wines from the best vineyards on the island. A local man, Alexandre Mazzoni made his culinary debut on the Côte d'Azur, before taking over the kitchens of the estate eight years ago. Talented and creative, he is first and foremost a committed and responsible chef. He carefully selects all his suppliers and uses seasonal products to design a menu that is as simple as it is unusual. Enhancing simple ingredients is his primary mission. He takes his inspiration both from the classics of French gastronomy that he reappropriates with his own signature, and from his modern vision of quality cuisine, accessible for all palates. In his opinion, the time spent combining flavours while retaining the simplicity of the product is the very essence of luxury. Sharing the best of Corsican produce with passion is his priority.
